Listed below are questions that we get asked on a regular basis, we have provided the information to help answer some of the questions that you may have.
What is balsamic vinegar, and why does your balsamic taste so different from what I buy at the supermarket?
Balsamic vinegar comes from Modena, Italy.
The name “Balsamic” refers to the vinegars thickness and aroma. The vinegar comes from the white Trebianno grape and when the unfermented grape juice (“must” is the technical name) is boiled down it become thick, syrupy and it takes on its rich color. The syrup then is fermented to make it acidic and is aged in wooden barrels. It is rotated in a variety of wooden barrels to take on some of that flavor. You can really taste the grape in our balsamic; it has been aged for 18 years and has a delightfully rich flavor. Often, when you buy a supermarket brand, the “balsamic” is rice wine vinegar with caramel flavor and color added and is very acidic.
What are first and cold pressed olive oil?
The first time that the olives are pressed for their oil is considered “first pressed”. Our oil is cold pressed, meaning that we don’t use heat to extract more oil, this allows the nutrients and flavor to remain intact.
Where do we get our olive oil from?
Our oil is solely from olives grown in California.
Why are there herbs left at the bottom of the bottle?
Our dipping oils combine oil and vinegar and for that reason they separate. The best way to get an even ratio of the two is to shake the bottle from side to side (versus up and down) before using, and pour promptly. Unfortunately, there will still be some herbs that remain on the bottom, if you want to get every drop of flavor, simply add a little olive oil to help get the rest out.
Do I need to refrigerate the product? How long should the product last?
We recommend storing all of our products away from direct sun and heat. You can store any of our products in the refrigerator to extend the shelf life. On average, the vinegars will last about 2+ years, the olive oils really depend on how you store it, if it away from the heat it should last about a year, and same for the dipping oils (we hope you go through it much sooner than that!!).
